Vegan Cacio e Pepe

Cacio e Pepe is one of our favorite pasta recipes to make. Our friend @fooduzzi takes all of the delicious flavors of this dish and makes it vegan by using cashews and water to make the creamy, nutty base.

  • Place cashews in a bowl and cover with boiling water. Allow to sit for 30 minutes. Drain well.
  • In a high-powered blender, blend cashews with water until silky smooth. Add nutritional yeast and lemon juice, and blend just until combined. Set aside.
  • Bring a pot of salted water to a boil. Cook pasta according to package instructions. Before draining pasta, reserve 1 1/2 cups of pasta water to finish sauce.
  • When the pasta is almost ready, heat vegan butter in a saucepan over medium heat. Add black pepper. Allow the pepper to """"fry"""" slightly, about 30 seconds then add 1 cup of the creamy cashew mixture. Stir in the hot pasta water 1/2 cup at a time to create desired consistency. Turn off the heat.
  • Once the pasta is al dente, add to the saucepan. Stir to coat. If the cream starts to clump, add just enough reserved pasta water to make it creamy.
  • Add salt to taste. Serve immediately with more freshly cracked pepper and Vegan Parmesan on the side!
