Vegan Vodka Sauce

The famous tomato-cream sauce goes dairy-free with our tasty vegan Vodka Sauce recipe. Made with cashews and our prized Italian San Marzano tomatoes, this vegan pasta sauce isn’t missing a beat.

DIRECTIONS

  1. Pulse cashews and water in a blender or food processor. Blend until smooth and creamy.
  2. In a large saucepan, heat the oil over medium-high heat. Add the onions and red pepper. Sauté until soft and slightly caramelized, about 6 minutes.
  3. Add the vodka and cook until reduced, 2-3 minutes. Add the tomatoes and stir well to combine.
  4. Stir in the cashew mixture. Cook for about 3-4 minutes until sauce comes together and is warmed through.
  5. In the meantime, bring a large pot of salted water to a boil. Cook the pasta according to package instruction. Drain, reserving 1 cup of pasta water for the sauce.
  6. Immediately add hot pasta to the saucepan with the sauce. Toss to combine. Cook together for 2 minutes to marry flavors. Add the hot reserved pasta water a little at a time if necessary for desired consistency.
  7. Serve and enjoy!
