  • Bring 5 quarts water to a boil. Add 3 tablespoons salt and broccoli. Cook broccoli until it becomes very tender. Remove with a slotted spoon and set aside.
  • Bring water back to a boil and cook pasta according to package instructions. Drain, reserving 1/2 cup of hot pasta water.
  • Meanwhile, in a large saucepan, add oil, anchovy, garlic and red pepper and gently sauté until fragrant, about 3 minutes.
  • Add cooked broccoli and 1/2 cup pasta water to the pan. Cover and bring the mixture to a simmer.
  • As the broccoli mixture begins to simmer, use the back of a fork to break up the broccoli into small pieces. The mixture should start to come together into a thick sauce. Cook for about 10 minutes, then remove garlic cloves and discard.
  • Add the cooked pasta and Parmesan cheese to the saucepan. Turn the heat to high and toss until combined.
  • Generously top with Pecorino Romano and serve.
