Bring a large pot of salted water to a boil. Cook pasta according to package instructions.
Meanwhile in a large pan, heat oil from jar of sun-dried tomatoes. Cook chicken in oil until evenly cooked through on all sides, about 7-9 minutes. Add sun-dried tomatoes to the pan while chicken finishes cooking.
Stir in Alfredo and hot pasta. Cook together for 2 minutes. Salt and pepper to taste. Top with mozzarella and cover until cheese is melted.
