Vegetarian Eggplant Caponata Penne Pasta

Two tasty DeLallo ingredients come together to create one easy-to-make and easy-to-love weeknight pasta dinner. Toss it with your favorite pasta shape. We love it with spaghetti or penne.

INGREDIENTS

1 (1-pound) package DeLallo Penne Rigate
1 (6.7-ounce) jar DeLallo Eggplant Caponata

DIRECTIONS

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions. Once al dente, drain.
In a large serving bowl, toss hot pasta with Caponata to coat.
Serve immediately.
