Apple Cider Glazed Pork Tenderloin

  • Preheat oven to 350˚F. Ready a baking sheet with parchment paper.
  • Pat pork tenderloin dry using a paper towel, and then season with salt and pepper on all sides.
  • In a mixing bowl, whisk together vinegar glaze, Dijon mustard, salt, pepper, balsamic vinegar and chopped rosemary. While whisking, introduce olive oil in a slow steady stream to emulsify.
  • Heat grapeseed oil in a large skillet on a medium-high setting. Sear pork, about 2-3 minutes on each side.
  • Brush half of the glaze on all sides of pork and transfer to the parchment-lined baking sheet. Cook for 30 minutes.
  • Brush on remaining glaze and bake for another 20 minutes, or until internal temperature reaches 150˚F.
  • Remove from oven and allow to rest 10 minutes before serving.
