Capellini Pasta with Marinated Tomatoes and Seared Scallops

This is going to be one of those dinners that quickly finds its place in heavy rotation on your table. @bevcooks marinates tomatoes, sears scallops and then combines them with our Capellini Angel Next Pasta. So simple, so fresh and full of flavor!

DIRECTIONS

  1. In a medium bowl, combine the tomatoes, garlic, parsley oil and a pinch of salt. Stir together and let it marinate at room temperature for at least one hour or up to one day.
  2. In a medium skillet, melt the butter over medium-high heat. Add the scallops to the pan and sear for 2 minutes. Add a pinch of salt and turn them gently and sear another minute, until you see browning on both sides, about 2 minutes.
  3. Meanwhile, bring 5 quarts of salted water to a boil. Cook the pasta according to package instructions. Drain, reserving 1 cup of the pasta water.
  4. Put the pasta back in the pot and stir in a few tablespoons of pasta water.
  5. Add the scallops and tomatoes and toss to combine.
  6. Garnish with more parsley and cheese and serve.
