Cheese Stuffed Gnocchi in Butter Cream Sauce

We know what you’re thinking… how could gnocchi get any better? These homemade potato dumplings are stuffed with melty Havarti cheese then tossed in a simple buttery cream sauce with a kiss of garlic. You may never buy a box of gnocchi again.

INGREDIENTS

  • 1 (8.82-ounce) package DeLallo Gnocchi Kit
  • 1 (8-ounce) DeLallo Havarti Cheese Wedge, shredded
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 3/4 cups half and half
  • 1/3 cup freshly grated Parmigiano-Reggiano cheese
  • Fresh basil leaves, torn
  • 1 teaspoon red chili pepper flakes
  • 1 teaspoon salt and 1/2 teaspoon pepper

DIRECTIONS

  1. To create gnocchi dough, combine package contents of DeLallo Gnocchi Kit with water in a small mixing bowl. Stir with a fork until dough begins to form. Knead by hand until the dough no longer sticks. Transfer to a lightly floured surface and form into a loaf shape.
  2. To form gnocchi, use a knife to cut dough into 1-inch strips. Roll out each strip by-hand into long ropes. Cut each rope into 1-inch pieces.
  3. Roll each piece into a ball. Press to flatten into 1-inch disks.
  4. Place a small amount of cheese onto each disk. Fold the dough around it to create a small round dumpling. Cover and set aside.
  5. In a large nonstick skillet, melt butter over medium heat. Add the garlic and cook for 30 seconds until fragrant, stirring continuously. Stir in the flour and cook for 1 minute until lightly golden, stirring continuously.
  6. Gradually whisk in the half and half. Season with salt and pepper. Simmer until thickened, about 1-2 minutes. Stir in the Parmigiano-Reggiano. Remove pan from heat.
  7. Boil 5 quarts of salted water in a large pot. Cook the gnocchi 3-5 minutes. Gnocchi are done once they float to the top. Remove gnocchi with a slotted spoon to drain and add to prepared sauce.
  8. Cook gnocchi with sauce for 3-5 minutes to marry flavors. Serve topped with fresh torn basil and pepper flakes.
