  • Preheat oven to 450˚F.
  • On a large baking sheet, arrange vegetables to roast. Marinate with DeLallo Veggie Marinades & roast for approximately 20-25 minutes, until all vegetables are golden brown. Remove from oven and set aside.
  • Boil a large pot of salted water for tortellini. Cook according to package instructions for ""al dente"" texture.
  • In a large saucepan, heat olive oil with cloves of smashed garlic. Once garlic becomes fragrant and nearly golden, remove from pan and discard. Gently toss tortellini in oil with roasted vegetables. Add a pinch of red pepper flakes. Cook together for about 2 minutes.
  • Serve with Grated Parmesan.
