  1. Preheat oven to 250°F or turn on a warming drawer.
  2. In a mixing bowl, whisk together the buttermilk, eggs and oil.
  3. In a separate large bowl, combine dry ingredients. Mix in the buttermilk and egg mixture. Fold in the cheeses last.
  4. Preheat waffle iron according to manufacturer’s instructions. Coat lightly with nonstick spray. Once hot, drop in the batter. Cook waffle until it is cooked through, crisp and lightly golden brown. Transfer to oven or wire rack and cover loosely with foil to keep warm. Repeat with the remaining batter.
  5. Meanwhile in a large sauce pan, cook meatballs in sauce over medium-high heat until hot all the way through, about 15 minutes.
  6. Serve waffles topped with meatballs and sauce.
