Chicken Bacon Gnocchi with Spinach and Sun-Dried Tomatoes

  1. Heat a large sauté pan over medium-high heat. Add bacon and cook until crisp, about 10 minutes. Remove bacon from pan using a slotted spoon and transfer to a paper-towel-lined plate.
  2. Add the chicken to the same pan and cook over medium-high heat until cooked through and no longer pink, about 2-3 minutes. Stir often to cook evenly.
  3. Stir in the garlic and tomatoes. Cook for 1 minute.
  4. Reduce heat to medium. Add chicken broth, cream, oregano and basil to the pan. Stir to combine. Cover sauce and simmer for 5 minutes.
  5. Meanwhile, bring a large pot of salted water to a boil. Cook gnocchi according to package insturction. Gnocchi will float to the surface when finished cooking. Drain gnocchi and rinse with cool water to prevent sticking. Set aside.
  6. Add bacon and spinach to the pan and cook until spinach is slighly wilted, about 2-3 minutes, stirring well.
  7. Stir in Parmigiano-Reggiano and cooked gnocchi. Cook together for 2 minutes, or until the sauce thickens. Salt and pepper to taste. Serve.
