Chicken Bacon Gnocchi with Spinach and Sun-Dried Tomatoes

  • Heat a large sauté pan over medium-high heat. Add bacon and cook until crisp, about 10 minutes. Remove bacon from pan using a slotted spoon and transfer to a paper-towel-lined plate.
  • Add the chicken to the same pan and cook over medium-high heat until cooked through and no longer pink, about 2-3 minutes. Stir often to cook evenly.
  • Stir in the garlic and tomatoes. Cook for 1 minute.
  • Reduce heat to medium. Add chicken broth, cream, oregano and basil to the pan. Stir to combine. Cover sauce and simmer for 5 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook gnocchi according to package insturction. Gnocchi will float to the surface when finished cooking. Drain gnocchi and rinse with cool water to prevent sticking. Set aside.
  • Add bacon and spinach to the pan and cook until spinach is slighly wilted, about 2-3 minutes, stirring well.
  • Stir in Parmigiano-Reggiano and cooked gnocchi. Cook together for 2 minutes, or until the sauce thickens. Salt and pepper to taste. Serve.
