Ingredients

  • Cookies
  • 3 1/2 sticks (28 tablespoons) unsalted butter
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1 tablespoon plus 2 teaspoons DeLallo Instant Espresso Coffee Powder
  • 4 1/2 cups all purpose flour
  • 1 teaspoon salt
  • Espresso Ganache
  • 1 3/4 cups heavy cream
  • 1 3/4 cups semi-sweet chocolate chips or a chopped bar
  • 2 1/2 teaspoons DeLallo Instant Espresso Coffee Powder

Directions

  • Whisk together the salt and flour.
  • Cream the butter and sugar with the paddle attachment on a stand mixer at medium speed until light and fluffy (about 2 minutes). Scrape the sides of the bowl with a rubber spatula.
  • Reduce the mixer speed, add the egg, vanilla, and espresso powder, and mix at medium speed until combined (about 1 minute). Scrape the sides of the bowl again.
  • Lower the mixer speed, add the dry ingredients in four separate batches, ensuring to scrape the sides and bottom of the bowl. Mix until a dough forms; knead by hand if necessary.
  • Roll out the dough to 1/4 inch thickness. Use a 2.5-inch round cookie cutter to cut out circles. Use a star cookie cutter to create windows on half of the circles.
  • Place on a parchment-lined cookie sheet and bake at 350°F for 10-11 minutes until just set. Cool on the cookie sheet.
  • Place the chocolate in a medium bowl.
  • In a medium saucepan, bring the heavy cream to a simmer (do not boil) and pour it over the chocolate.
  • Sprinkle the espresso powder on top and let it sit for 5 minutes.
  • Stir until completely combined and smooth.
  • Place a heaping teaspoon of ganache on top of the solid circle, top with a star-cutout cookie, and repeat the process. Dust with powdered sugar.
