Grilled Shrimp And Watermelon Chopped Salad

INGREDIENTS

  • For the dressing:
  • 2 1/2 tablespoons DeLallo Golden Balsamic Vinegar
  • 1 teaspoon water
  • 1 tablespoon chopped shallots
  • 1/8th teaspoon kosher salt
  • pinch fresh black pepper
  • 3 tablespoons DeLallo Extra Virgin Olive Oil, divided
  • For the shrimp:
  • 10 oz shelled and deveined (about 24) large shrimp
  • 1 clove garlic, crushed
  • Seasoned salt, to taste
  • For the Salad:
  • 8 cups chopped romaine
  • 4 cups diced watermelon
  • 4 ounces soft goat cheese

DIRECTIONS

  1. In a small bowl, combine vinegar, water, shallots, salt and pepper. Gradually add 2 tablespoons olive oil, stirring until incorporated.
  2. Make the shrimp. Heat the remaining tablespoon of olive oil in a medium pan. Add the garlic and shrimp and cook for 3 minutes. Flip shrimp and cook for another 2-3 minutes. Remove from pan and set aside.
  3. In a large bowl, combine the romaine, watermelon and goat cheese. Pour the dressing on the salad and toss to combine.
  4. Divide salad on to four plates. Place the shrimp on top and serve.
