  • In a small bowl, combine vinegar, water, shallots, salt and pepper. Gradually add 2 tablespoons olive oil, stirring until incorporated.
  • Make the shrimp. Heat the remaining tablespoon of olive oil in a medium pan. Add the garlic and shrimp and cook for 3 minutes. Flip shrimp and cook for another 2-3 minutes. Remove from pan and set aside.
  • In a large bowl, combine the romaine, watermelon and goat cheese. Pour the dressing on the salad and toss to combine.
  • Divide salad on to four plates. Place the shrimp on top and serve.
