  • In a mixing bowl, stir together the olive oil, the zest and juice of each fruit, chili peppers, herbs and peppercorns.
  • Break the feta into 1/2-inch cubes. Add them to the oil mixture. Gently fold together until feta is evenly coated.
  • Transfer to a jar and add enough olive oil to cover the feta. Refrigerate for at least 24 hours (and up to 2 weeks).
  • Remove from the refrigerator at least 30 minutes before serving to allow solidified olive oil to liquify.
  • Serve with bread, toasts or crackers.
