Ingredients

  • 1 (5.3-ounce) jar DeLallo Castelvetrano Olives
  • ½ cup mozzarella pearls
  • 2 tablespoons DeLallo Castelvetrano Extra Virgin Olive Oil
  • Juice from ½ a ripe lemon, about 1 tablespoon
  • 1 teaspoon lemon zest
  • Pinch red pepper flakes, to season
  • Pinch kosher salt, to season
  • Few turns cracked black pepper, to season
  • 2-3 tablespoons Italian parsley, chopped small
  • ¾ cup whole milk ricotta, strain if watery
  • ¼ cup Greek yogurt, 0%
  • DeLallo Pesto
  • 2-3 tablespoons Marcona almonds, roughly chopped

Directions

  • Drain all liquid from the pitted olives. Add them to a mixing bowl with the mozzarella pearls, extra virgin olive oil, fresh squeezed lemon juice, lemon zest, red pepper flakes, kosher salt, cracked black pepper and chopped Italian parsley. Toss to combine.
  • Use a cheesecloth to strain your whole milk ricotta cheese. Add it to a food processor along with the Delallo simply pesto and Greek yogurt. Buzz until smooth and creamy.
  • Spread the whipped ricotta in a serving bowl. Spoon on the marinated olives and cheese mixture. Top with chopped Marcona almonds. Serve and enjoy!
