  • Preheat oven to 400˚F.
  • Prepare a large baking sheet with cooking spray. Arrange mushroom caps gill-side up on baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast until tender, about 15 minutes.
  • To build mushroom stackers, top each cap with a generous layer of pesto, onion slices, spinach, tomato and mozzarella. Once stacked, place sheet back into the oven.
  • Bake for another 5 minutes, or until mozzarella begins to melt.
  • Serve topped with fresh basil.
