INGREDIENTS

  • 1 (17.6-ounce) DeLallo Pizza Dough Kit
  • 1 tablespoon DeLallo Extra Virgin Olive Oil, plus 1 teaspoon
  • 2 tablespoons butter
  • 1 large onion, diced
  • 1 pound pancetta, ground*
  • 1 large shallot, minced
  • 1 garlic clove, minced
  • 1 cup chicken stock
  • 1 cup pumpkin purée
  • Small bunch of fresh sage leaves, chopped
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 egg
  • ¼ cup Gruyère, shredded
  • ¼ cup provolone cheese, shredded
  • ½ cup cream
  • Salt and pepper

DIRECTIONS

  1. Combine flour mix and yeast packet in a large mixing bowl with 1 1/4 cups lukewarm water. Stir with a fork until dough begins to form.
  2. Knead by hand for 3 minutes, or until dough is soft and smooth. Transfer to a clean, lightly oiled bowl (1 teaspoon) and cover tightly with plastic wrap. Allow the dough to rise in a warm place until doubled, about 45 minutes. (After this step, you can refrigerate for use within 1-3 days.)
  3. Preheat oven to 500˚F.
  4. Meanwhile, heat skillet over medium-high heat. Once hot, melt butter, then reduce heat to low. Stir in onions. Once coated with butter, spread the onions evenly in the pan and cook, stirring occasionally. After 10 minutes, sprinkle onions with salt. Cook for 30 more minutes, until caramelized. Set aside.
  5. Heat a separate skillet over medium-high heat. Add 1 tablespoon of oil and then the pancetta. Sauté until golden brown, about 3-5 minutes. Remove from heat and set aside.
  6. In a mixing bowl, combine pumpkin purée, cream, sage, rosemary, thyme, egg and salt and pepper. Stir to combine.
  7. In another skillet over medium-high heat, add remaining oil. Once oil is hot, add shallots and garlic. Cook and stir until the shallots have softened and garlic becomes fragrant, about 2 minutes. Add the pumpkin mixture, and then, slowly whisk in the chicken stock. Once the sauce has cooked for a few minutes and is at the desired consistency, turn off heat and set aside.
  8. Roll out dough into a circle on a floured surface. Spread pumpkin sauce evenly over the dough. Top with onions, pancetta and cheeses.
  9. Bake for 12-15 minutes, or until the crust becomes golden. Remove pizza from oven and top with fresh herbs.
  10. *Note: If you can’t find ground pancetta, buy a pound sliced and purée in a food processor or blender.
