Spaghetti Squash Chicken Parmesan

  1. Preheat oven to 400°F. Line a large, rimmed baking sheet with parchment paper.
  2. Cut off the very top and bottom of the squash. Slice the squash in half lengthwise. Scrape out the seeds. Drizzle with extra virgin olive oil. Season with salt and pepper to taste.
  3. Place squash, cut-side down, onto the prepared baking dish. Bake until tender, about 35-45 min.
  4. Remove from the oven. Allow squash to rest until cool enough to handle.
  5. Using a fork, scrape the flesh to create long noodle-like strands.
  6. Ready 3 shallow bowls for breading. In the first bowl, combine breadcrumbs and Parmesan cheese. In the second bowl, pour flour. Reserve the final bowl for two beaten eggs.
  7. Heat extra light olive oil in a large oven-proof skillet over medium-high heat.
  8. Dredge the chicken in flour. Dip into the egg mixture to coat. Then, dip into the breadcrumb mixture, pressing to coat. Repeat process on each piece.
  9. Working in batches, add the chicken to the skillet. Cook until cooked through and golden brown and crispy on both sides, about 3-4 min. Transfer to a paper-towel-lined plate. Let cool before cutting into bite-size pieces.
  10. Preheat oven to broil.
  11. Add spaghetti squash to the oven-proof skillet and layer with chicken and pasta sauce. Sprinkle with shredded cheese.
  12. Place into the oven and broil until cheese melts and becomes golden brown, about 2 min.
  13. Serve immediately sprinkled with basil.
