Sun-Dried Tomato Stuffed Chicken with Sun-Dried Tomato Cream Sauce

The sweet, chewy addition of sun-dried tomatoes brings its bright, sunny savor to a classic chicken recipe. Stuffed with tangy tomato stuffing and topped with a sweet, homemade cream sauce, these stuffed chicken breasts won’t disappoint!

  • Preheat oven to 350˚F.
  • In a large saucepan, sauté onion and celery in butter until translucent and softened. In a large bowl, toss warm butter mixutre with 1/2 of sun-dried tomatoes, cubed bread, provolone, Romano, salt and pepper.
  • Divide the stuffing mixture between chicken breasts, and roll filling between each breast. Secure with toothpicks. Rub chicken with olive oil, salt and pepper. Arrange on a nonstick baking sheet. Bake for about 30 minutes.
  • In the meantime, to prepare cream sauce: Simmer diced shallots in butter until softened. Add wine and allow to cook off. Stir in remaining sun-dried tomatoes and the heavy cream. Simmer on low, stirring continously until sauce has thickened, about 8 minutes.
  • Serve sauce over baked chicken.
