Spicy Calabrian Vodka Sauce

  • In a large saucepan, heat the oil over medium-high heat. Sauté the onions until soft and slightly caramelized, about 6 minutes.
  • Stir in the tomato paste and cook for 2 minutes.
  • Add the peppers. Cook for 2 more minutes. Then, stir in the vodka and cook until reduced, about 2-3 minutes.
  • Add the cream, stirring continuously. Cook until sauce begins to thicken, about 2 minutes. Remove from the heat and stir in the cheese.
  • In the meantime, bring a large pot of salted water to a boil. Cook the pasta according to package instruction. Drain, reserving 1 cup of pasta water for the sauce.
  • Immediately add hot pasta to the saucepan with the sauce. Toss to combine. Cook together for 2 minutes to marry flavors. Add the hot reserved pasta water a little at a time if necessary for desired consistency.
  • Serve topped with grated Parmigiano-Reggiano.
