Wild Mushroom Pasta Recipe

Mushroom lovers will go wild for this earthy, buttery wild mushroom pasta dish. We create a simple sauce of garlic, butter, wild mushrooms and fresh herbs that allows the mushroom flavor to shine through. Tossed with our Casarecce pasta, this recipe is as easy as it is impressive.

INGREDIENTS

  • 1 (16-ounce) package DeLallo Casarecce Pasta
  • 4 tablespoons butter
  • 4 tablespoons DeLallo Extra Virgin Olive Oil
  • 1 large shallot, diced
  • 2 cloves garlic, finely minced
  • 2 pounds assorted wild mushrooms of your choice (morels, portobellos, crimini, oyster and stemmed shiitakes), large mushrooms quartered, medium mushrooms halved
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese
  • 1 tablespoon fresh chopped tarragon
  • 1/2 cup chopped fresh parsley

DIRECTIONS

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain, reserving 1/2 cup of hot pasta water.
  2. Heat oil and butter in a large heavy-bottomed skillet. Add shallot and garlic and sauté for 10 minutes, stirring frequently.
  3. Add mushrooms, salt, pepper and sauté until tender, about 10-15 minutes.
  4. Serve sprinkled with fresh tarragon and parsley.
