INGREDIENTS 1 lb. DeLallo Casarrece Pasta 4 tablespoons butter 4 tablespoons DeLallo Extra Virgin Olive Oil 1 large shallot, diced 2 cloves garlic, finely minced 2 pounds assorted wild mushrooms of your choice (morels, portobellos, crimini, oyster and stemmed shiitakes), large mushrooms quartered, medium mushrooms halved 1 teaspoon salt 1/2 teaspoon pepper 1/2 cup freshly grated Parmigiano-Reggiano cheese 1 tablespoon fresh chopped tarragon 1/2 cup chopped fresh parsley DIRECTIONS Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain, reserving 1/2 cup of hot pasta water. Heat oil and butter in a large heavy-bottomed skillet. Add shallot and garlic and sauté for 10 minutes, stirring frequently. Add mushrooms, salt, pepper and sauté until tender, about 10-15 minutes. Serve sprinkled with fresh tarragon and parsley.
