  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain, reserving 1/2 cup of hot pasta water.
  • Heat oil and butter in a large heavy-bottomed skillet. Add shallot and garlic and sauté for 10 minutes, stirring frequently.
  • Add mushrooms, salt, pepper and sauté until tender, about 10-15 minutes.
  • Serve sprinkled with fresh tarragon and parsley.
