What is gluten-free pasta?

Gluten-free pasta is a pasta that is made without the durum wheat of traditional semolina pasta. Just because one has Celiac disease, a gluten intolerance or chooses to eat wheat-free doesn’t mean they shouldn’t be able to enjoy great Italian pasta. An alternative to wheat pasta, gluten-free pasta is made with corn, rice, chickpeas and sometimes a blend of two or more of these.
