Gluten-Free Penne Pasta With Sun-Dried Tomatoes & Turkey Sausage

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions for al dente texture. Reserve 1 cup of pasta water before draining.
  2. Meanwhile, in a large nonstick skillet, sauté turkey sausage over medium heat until browned, breaking up with a spoon as it cooks. Once cooked through, transfer to a plate and set aside.
  3. Reduce heat to medium-low. Sauté shallots and garlic in olive oil until translucent, about 5 minutes. Season with salt and pepper. Add mascarpone cheese and a bit of the reserved pasta for the desired consistency of sauce. Add baby spinach and sun-dried tomatoes. Stir in Parmigiano cheese.
  4. Toss mixture with cooked pasta and sausage until well coated.
