Black Rice Salad with Chickpeas, Avocado and Fresh Mozzarella

Just because your meal is healthy doesn’t mean it has to be boring. Starring our signature Italian Black Rice with its aromatic nutty flavor and pleasantly chewy texture, this grain salad is anything but boring. We load it up with fresh greens, creamy avocado, garden veggies and buttery balls of fresh mozzarella.

INGREDIENTS

  • 1 1/2 cups DeLallo Italian Black Rice
  • 2 3/4 cups water
  • 12 ounces spring greens or greens of your choice
  • 1 (14-ounce) can DeLallo Imported Italian Chickpeas, drained
  • 2 avocados, diced
  • 1 English cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 4 Roma tomatoes, diced
  • 1 cup ciliegine mozzarella balls
  • 2 tablespoons DeLallo Avocado Oil
  • 2 tablespoons lemon juice
  • 1 tablespoons dried oregano
  • Salt and pepper to taste

DIRECTIONS

  1. Rinse the rice in a sieve under cold running water. Drain well. Add the rice and 2 3/4 cups of water to a saucepan.
  2. Bring water to a boil before reducing to a simmer. Cook with the lid ajar for 25-30 minutes, until all the liquid has been absorbed. Transfer cooked rice to a separate bowl and allow to cool.
  3. Meanwhile, in a large serving bowl, combine greens, chickpeas, avocado, cucumber, onion, tomatoes and mozzarella.
  4. In a separate mixing bowl, create the dressing. Whisk together the oil, lemon juice and oregano. Pour over the vegetables.
  5. Add the cooled rice to the serving bowl. Toss well to combine. Salt and pepper to taste.
