  • Rinse the rice in a sieve under cold running water. Drain well. Add the rice and 2 3/4 cups of water to a saucepan.
  • Bring water to a boil before reducing to a simmer. Cook with the lid ajar for 25-30 minutes, until all the liquid has been absorbed. Transfer cooked rice to a separate bowl and allow to cool.
  • Meanwhile, in a large serving bowl, combine greens, chickpeas, avocado, cucumber, onion, tomatoes and mozzarella.
  • In a separate mixing bowl, create the dressing. Whisk together the oil, lemon juice and oregano. Pour over the vegetables.
  • Add the cooled rice to the serving bowl. Toss well to combine. Salt and pepper to taste.
