Creamy Cacio e Pepe with Cavatappi Pasta

  • Cook pasta according to package instructions. Cook to 1 minute shy of al dente. Reserve 1 cup of pasta water.
  • About 1 minute before you drain your pasta, in a large skillet set over medium heat, add the olive oil until glistening.
  • Add the pepper and cook, swirling the pan or pushing it around with a wooden spoon until fragrant, about 1 minute.
  • Add ½ cup of the reserved pasta water to the pot until it simmers.
  • Turn off the heat before adding in the drained pasta and the cheese. Using tongs or a wooden spoon, stir quickly until the cheese and pasta water have come together.
  • Use the remaining ½ cup of pasta water to thin the sauce out to desired consistency.
  • Serve the pasta topped with extra pepper or cheese if desired.
