  • Preheat oven to 400°F.
  • Sprinkle the chicken thighs with salt, pepper and garlic powder. Dredge in flour.
  • Melt the oil and butter in a cast iron, or oven-safe skillet, over medium-high heat. Once hot, add the chicken and cook for 4-5 minutes on each side or until golden. Remove the chicken from the pan and set aside.
  • Deglaze the pan with the broth or wine and Dijon mustard. Scrape up any brown bits and let it simmer for 2 minutes.
  • Stir in the cream, tomatoes, olives, kale and herbs. Add the chicken back to the pan.
  • Transfer the pan to the oven and cook until the chicken is cooked through, about 20-25 minutes.
  • Remove from oven and serve immediately.
