Creamy Tuscan Olive Chicken

  1. Preheat oven to 400°F.
  2. Sprinkle the chicken thighs with salt, pepper and garlic powder. Dredge in flour.
  3. Melt the oil and butter in a cast iron, or oven-safe skillet, over medium-high heat. Once hot, add the chicken and cook for 4-5 minutes on each side or until golden. Remove the chicken from the pan and set aside.
  4. Deglaze the pan with the broth or wine and Dijon mustard. Scrape up any brown bits and let it simmer for 2 minutes.
  5. Stir in the cream, tomatoes, olives, kale and herbs. Add the chicken back to the pan.
  6. Transfer the pan to the oven and cook until the chicken is cooked through, about 20-25 minutes.
  7. Remove from oven and serve immediately.
