Easy Cheesy Baked Pasta with Tuna

  1. Preheat oven to 425˚F.
  2. Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain, reserving 1 cup of pasta water. Set noodles aside and rinse to prevent sticking.
  3. In an oven-proof pan, heat 2 tbsp. of olive oil over medium heat. Once hot, add mushrooms and ¼ tsp. salt. Sauté until mushrooms are cooked down and beginning to brown, about 5 min.
  4. Whisk in the half and half, mascarpone and reserved pasta water. Continue to cook until smooth and slightly thickened, stirring frequently, about 2 min.
  5. Reduce the heat to low. Whisk in the Cheddar, Dijon, cayenne and ½ tsp. salt. Stirring continuously, cook until all the cheese has melted and the sauce is smooth. Stir in the cooked orzo, tuna and peas until well combined.
  6. In a mixing bowl, combine the crushed toasts, breadcrumbs and the remaining 2 tbsp. of oil. Sprinkle this mixture over the noodles in the pan.
  7. Bake for 10 min., or until the breadcrumb topping has browned and the sauce is bubbling at the edges. Remove from heat and allow 5 min. to rest before serving.
