Tuna Pasta Bake

  • Preheat oven to 425˚F.
  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain, reserving 1 cup of pasta water. Set noodles aside and rinse to prevent sticking.
  • In an oven-proof pan, heat 2 tbsp. of olive oil over medium heat. Once hot, add mushrooms and ¼ tsp. salt. Sauté until mushrooms are cooked down and beginning to brown, about 5 min.
  • Whisk in the half and half, mascarpone and reserved pasta water. Continue to cook until smooth and slightly thickened, stirring frequently, about 2 min.
  • Reduce the heat to low. Whisk in the Cheddar, Dijon, cayenne and ½ tsp. salt. Stirring continuously, cook until all the cheese has melted and the sauce is smooth. Stir in the cooked orzo, tuna and peas until well combined.
  • In a mixing bowl, combine the crushed toasts, breadcrumbs and the remaining 2 tbsp. of oil. Sprinkle this mixture over the noodles in the pan.
  • Bake for 10 min., or until the breadcrumb topping has browned and the sauce is bubbling at the edges. Remove from heat and allow 5 min. to rest before serving.
