Directions

  • To create the dressing, combine all ingredients in a mason jar with a lead. Seal and shake to emulsify.
  • Cook farro according to package instructions. Drain and cool.
  • Meanwhile, heat a skillet over medium heat. Add enough oil to coat the bottom, about 1 tablespoon. Stirring continuously, toast pine nuts until lightly browned and fragrant, about 5 minutes. Once toasted, transfer to a bowl. Lightly season with salt and set aside.
  • Divide the farro among 4 bowls. Arrange the peppers, artichokes, tomatoes, avocado and olives along the sides of the bowls. Sprinkle with toasted pine nuts and mint. Drizzle with the dressing and serve.
