Italian Tortellini Skewers with Pesto
Your favorite cheese-stuffed pasta and fresh, fragrant Simply Pesto® star in this fun fingerfood recipe. If that wasn’t enough, we skewered them up with juicy tomatoes, slices of Genoa salami, creamy mozzarella balls and fresh basil leaves
- Bring a large pot of salted water to a boil. Cook tortellini according to package instruction. Drain.
- In the meantime, combine pesto and olive oil in a large mixing bowl. Add tortellini to the bowl and carefully stir to coat pasta. Allow tortellini to cool skewering.
- Gently thread ingredients onto skewers. Be creative! Create smaller skewers for appetizers (one of each ingredient per skewer) or load them up in your favorite order.
- Save a few basil leaves to chop and sprinkle over skewers as a garnish.
