Italian Turkey Sausage Pasta

  1. Heat oil in a large heavy-bottomed skillet. Add celery, carrots, onion and garlic and sauté until vegetables are soft and onion is translucent, about 10 minutes.
  2. Add sausage to the skillet and cook until browned, about 8 to 10 minutes.
  3. Add tomatoes and spices, and simmer until the sauce thickens, about 20 minutes.
  4. Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain, reserving 1/4 cup of hot pasta water.
  5. Add cooked pasta and pasta water to the tomato and sausage sauce. Stir well and cook for 5 minutes.
  6. Top the pasta with Parmesan and serve.
