  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve ¼ cup pasta water before draining.
  • Meanwhile, freshly grate the Parmigiano Reggiano and finely grate the lemon zest and juice the lemons.
  • In a large pan or skillet, melt the butter over medium heat. Add the oil, lemon zest and lemon juice. Stir to combine.
  • Pour in heavy cream and pasta water. Let the sauce come to a simmer until slightly thickened. Add the cheese and stir until melted and smooth.
  • Add the cooked pasta to the pan and toss to evenly coat. Garnish with black pepper, more cheese and serve.
