Garlic Spaghetti With Three Peppers

  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain, Reserving 1/2 cup of hot pasta water.
  • Meanwhile, combine oil, garlic, anchovies and chopped peppers in a large skillet. Cook, stirring constantly until garlic is golden, about 4 to 5 minutes.
  • Add tomato paste and cook, whisking constantly, until the paste is slightly darker, about 1 minute.
  • Add pasta and hot pasta water and cook until the liquid is reduced, about 1 minute. Divide on to plates or serve family style.
