Sweet Potato & Caramelized Onion Pizza With Sopressata & Balsamic Glaze

This is a pizza like you’ve never seen a pizza. Featuring our super simple Italian pizza dough, sweet potato, caramelized onions, dollops of dreamy mascarpone and a drizzle of balsamic glaze, this is one homemade pizza recipe you will make again and again.

  1. Combine flour mix and yeast packet in a large mixing bowl with 1 1/4 cups lukewarm water. Stir with a fork until dough begins to form.
  2. Knead by hand for 3 minutes, or until dough is soft and smooth. Transfer to a clean, lightly oiled bowl and cover tightly with plastic wrap. Allow the dough to rise in a warm place until doubled, about 45 minutes. (After this step, you can refrigerate for use within 1-3 days.)
  3. Preheat oven to 500˚F. Wash potatoes and poke holes using a fork. Brush with oil and sprinkle with salt. Roast in oven for 1 hour.
  4. Meanwhile, heat skillet over medium-high heat. Once hot, melt butter, then turn down heat to low. Add onions and stir to coat with butter. Spread out the onions evenly in the pan and cook, stirring occasionally. After 10 minutes, sprinkle onions with salt. Cook for 30 more minutes, until caramelized.
  5. Remove sweet potatoes from the oven. Allow to cool for 10 minutes. Scoop out sweet potato, removing the skins. Pulse in a food processor with salt. Add olive oil until purée is smooth.
  6. Reduce oven temperature to 450˚F.
  7. Cut prepared pizza dough in half. Roll out dough into a circle on a floured surface. Evenly spread puréed potato mixture onto pizza dough. Sprinkle with provolone. Top with onions, dollops of mascarpone and sliced Soppressata.
  8. Bake for 10-12 minutes, or until cheese melts and crust becomes golden brown.
  9. Remove from oven. Allow to rest for 2-3 minutes before cutting. Serve drizzled with balsamic glaze and sprinkled with sage.
