1 (7-ounce) container DeLallo Olives Gigante or your favorite green olive, drained and roughly chopped
1/4 cup fresh chopped parsley
4 (6-ounce) salmon filets
DIRECTIONS
In a mixing bowl, whisk together 2 tablespoons oil, lemon juice, lemon zest, honey and salt. Stir in chopped olives and parsley. Set aside.
Meanwhile, place salmon in a small baking dish. Drizzle with 2 tablespoons olive oil, and then sprinkle with 1 teaspoon of salt. Allow to marinade for 15 minutes.
Preheat grill to medium-high heat. Grill salmon until cooked through, about 3-4 minutes per side.
