Tomato Passata Gazpacho

Summer is the perfect season for gazpacho, a chilled, velvety soup made from fresh vegetables. In this recipe, we combine your favorite summer veggies with our rich passata and then add Calabrian chili pepper oil for the perfect amount of heat. Bet you never knew cold soup could taste so good.

  • Reserve 2 tablespoons each of the tomato, cucumber, pepper, and onion. Finely chop the vegetables, mix them together, and set aside for garnish.
  • In a food processor or blender, puree the remaining ingredients until smooth, adjusting the seasoning to taste with lemon juice and salt.
  • Cover and chill thoroughly for at least 3 hours, but preferably overnight.
  • Adjust the consistency as desired with water. Serve in chilled bowls garnished with reserved vegetables.
