Yes, jarred vodka sauce does contain vodka but just enough to bring out the flavor of tomatoes and to help to blend the tomatoes and the cream. There is nothing boozy about this sauce. A small amount of distilled spirits is added to the simmering sauce and most of it cooks off pretty quickly. The longer a sauce cooks, the more alcohol burns off.
Yes, kids can eat vodka sauce. Only a negligible amount is added to bring out the flavors and to help to emulsify the tomato sauce with the fresh cream. Vodka is added while the vodka pasta sauce simmers so most is burned off fairly quickly.
Pasta water is not necessary for all jarred sauces and recipes, but helpful in getting the sauce to stick to your pasta. Depending on the recipe, adding the hot, starchy water can give your final dish a looser, more smooth consistency. Just remember to add a little at a time, so that you can control the consistency.
