Artichoke Appetizer

  • Heat the oil over medium heat in a medium sauce pan.
  • Add the garlic and stir for 1 minute or until fragrant. Add the white wine and simmer for 2-3 minutes to cook off the alcohol.
  • Pour in the lemon juice. Then add the butter one cube at a time, whisking constantly. Season the mixture with salt and pepper.
  • Remove the pan from heat and add crème fraiche and Parmesan cheese. Whisk until the sauce is smooth.
  • Carefully add the artichoke hearts to the sauce and toss. Transfer to a serving platter, top with chives (optional) and serve.
