How To Make Bruschetta Chicken

This Bruschetta Chicken recipe comes together in no time. It is super simple and is made with just a few ingredients, many of which are in your pantry already!

1. Marinate the chicken.

Combine seasonings, lemon juice and some of the olive oil. Marinate the chicken for at least 30 minutes (but up to 4 hours) to develop its flavors.

2. Cook the chicken on the stovetop.

Heat the olive oil in a large oven-proof skillet. Cook the chicken, being sure to brown each side.

3. Top off the chicken.

Spoon the bruschetta topping over each of the chicken breasts. Top with mozzarella. Broil the chicken in the skillet until the cheese is melted and turns golden, about 2 minutes.

4. Serve.

Remove from the oven and allow chicken to rest before serving. Drizzle with balsamic glaze (optional) for an extra burst of tangy-sweet flavor.

Preparation Tips

Use a grill or grill pan to cook the chicken before broiling. This will add an extra dimension of smoky flavor that will really accent the bright acidity of the tomatoes. We love how it adds some subtle grill marks to up your presentation factor.

When cooking the chicken, be sure to preheat the grill, grill pan or skillet. Do not continually flip the chicken. Cook for all of 6-8 minutes on one side before turning to cook the other side.

Storage Tips

To store leftovers, refrigerator Bruschetta Chicken in an airtight container for up to 3 days.

To freeze the leftovers, we recommend storing the chicken in a freezer-friendly container for up to 2 months. We do not recommend freezing the chicken with the tomato bruschetta. The tomatoes do not hold up to reheating.

Reheat the leftovers on the stovetop over low-to-medium heat. Cover and add a splash of water to keep the chicken from drying.

  1. In a small mixing bowl, whisk together seasoning spices, garlic, lemon juice, salt and 3 tablespoons of oil. Place chicken in a resealable plastic bag or a deep dish. Pour marinade over the chicken. Seal or cover, then refrigerate. Marinate for 30 minutes up to 4 hours to develop flavors.
  2. Heat remaining oil in a large oven-proof skillet over medium-high heat. Add the marinated chicken to the pan. Cook the chicken until cooked through and browned, about 6-8 minutes per side.
  3. Turn on the oven to the broil setting. Spoon equal amounts of bruschetta on top of each chicken breast. Top each breast with a slice of mozzarella. Broil until the cheese is melted and turns golden brown, about 2 minutes.
  4. Remove from the oven. Allow to rest for 5 minutes, then serve.
