The Ingredients You Will Need To Make Bruschetta Chicken
This Bruschetta Chicken recipe requires just a few ingredients, many of which you probably already have on-hand. These are the key ingredients that go into making this easy weeknight recipe the tasty chicken dish that it is.
Seasonings: A great seasoning blend like those in our DeLallo Dipping Seasonings Shaker make it easy to add some flavor to the chicken breasts in this recipe. We don’t like to overdo it, but a little goes a long way.
Garlic: Would it be Italian-style chicken without a peck of garlic? We don’t like to overpower our dishes with garlic—believe it or not, Italians do not overload their recipes with garlic—but some just can’t get enough. You can adjust the garlic in this recipe to your liking.
Lemon Juice: A kiss of bright citrus is a great way to flavor the chicken just a bit before cooking. Lemon has a sweet way of complementing herbs in most any dish.
Olive Oil: Olive oil is the foundation of so many great meals and this Bruschetta Chicken recipe is no different. Choose a great quality of extra virgin olive oil to honor your creations.
Chicken: We use boneless skinless chicken breasts for this recipe. The tomato-y bruschetta topping ensures that each chicken breast will be juicy and full of flavor.
Bruschetta: You can certainly whip up your own homemade bruschetta with olive oil, cherry tomatoes or Roma tomatoes, red onion, garlic and fresh basil… or you can just grab a jar of your favorite store-bought bruschetta topping.
Cheese: Fresh mozzarella is wonderfully mild and melty and perfect for topping this Bruschetta Chicken recipe.
Balsamic Glaze (optional): We love serving up this Balsamic Chicken recipe with a generous drizzle of balsamic glaze as a unique condiment. You can create your own homemade balsamic glaze with a reduction of balsamic vinegar, or pick up some DeLallo Balsamic Glaze on your next grocery trip (if you don’t have it already). This darkly sweet topping is the perfect complement to the tangy and herbaceous tomato mixture that is the bruschetta.
How To Make Bruschetta Chicken
This Bruschetta Chicken recipe comes together in no time. It is super simple and is made with just a few ingredients, many of which are in your pantry already!
1. Marinate the chicken.
Combine seasonings, lemon juice and some of the olive oil. Marinate the chicken for at least 30 minutes (but up to 4 hours) to develop its flavors.
2. Cook the chicken on the stovetop.
Heat the olive oil in a large oven-proof skillet. Cook the chicken, being sure to brown each side.
3. Top off the chicken.
Spoon the bruschetta topping over each of the chicken breasts. Top with mozzarella. Broil the chicken in the skillet until the cheese is melted and turns golden, about 2 minutes.
4. Serve.
Remove from the oven and allow chicken to rest before serving. Drizzle with balsamic glaze (optional) for an extra burst of tangy-sweet flavor.
Preparation Tips
Use a grill or grill pan to cook the chicken before broiling. This will add an extra dimension of smoky flavor that will really accent the bright acidity of the tomatoes. We love how it adds some subtle grill marks to up your presentation factor.
When cooking the chicken, be sure to preheat the grill, grill pan or skillet. Do not continually flip the chicken. Cook for all of 6-8 minutes on one side before turning to cook the other side.
Storage Tips
To store leftovers, refrigerator Bruschetta Chicken in an airtight container for up to 3 days.
To freeze the leftovers, we recommend storing the chicken in a freezer-friendly container for up to 2 months. We do not recommend freezing the chicken with the tomato bruschetta. The tomatoes do not hold up to reheating.
Reheat the leftovers on the stovetop over low-to-medium heat. Cover and add a splash of water to keep the chicken from drying.
Substitutions And Additions
Add a carb. Make it a more well-rounded meal and serve this chicken recipe with the carb of your choice. Try it with pasta, couscous or rice.
Switch up the herbs. Try a different seasoning or marinade for the chicken. Use herbs like fresh basil, rosemary or marjoram—just to name a few.
Create a crostini-like presentation and serve Bruschetta Chicken atop crusty slices of Italian bread.
Use fried breaded chicken instead of pan-fried or grilled.
Serve your Bruschetta Chicken drizzled with balsamic glaze.
What To Serve With Bruschetta Chicken
We love Bruschetta Chicken with a leafy green salad and bright vinaigrette dressing.
Bring on the bread! Don’t forget to serve up your Bruschetta Chicken with slices of fresh bakery bread. Italian or Sourdough are excellent choices.
Skip the salad and try it with a bowl of roasted or steamed veggies topped with a sprinkle of Parmesan cheese. We love broccoli, asparagus, zucchini and green beans.
Bruschetta Chicken: FAQ
What Is Bruschetta? What Is It Made Of?
In Italy, Bruschetta is a classic antipasto consisting of grilled toasts rubbed with garlic and its colorful tomato topping. This appetizer was actually a Tuscan-born innovation that came about as a way to use up the stale bakery breads. The Italian-American version of bruschetta is just the tomato mixture that can be used as a condiment, topping or antipasto. Bruschetta can be made in many different styles and many ingredients, depending on tastes—and in Italy, depending on the region.
A typical bruschetta topping might be chopped tomatoes (cherry tomatoes or Roma tomatoes), red onion, fresh parsley, a squeeze of lemon, salt and extra virgin olive oil. Other variations include beans, peppers, more veggies, cheeses and even cured meats.
Can I Cook The Chicken On The Grill Or In The Oven Instead?
Yes, we love cooking the chicken on the grill (or a grill pan) to add some of that char-grilled smoky flavor to the final dish. Just be sure chicken is cooked all the way through before broiling with the bruschetta and fresh mozzarella topping.
How Do I Make Sure The Chicken Is Fully Cooked?
Cut into the chicken to check for doneness (no pink). Likewise, you know your chicken breasts are cooked when the thermometer reads 165°F (74°C).
Can I Make This Dish Ahead Of Time?
To save time, you can marinate the chicken beforehand and even cook the chicken, but this Bruschetta Chicken comes together fairly quickly and easily. If you do decide to cook ahead of time, save the bruschetta topping and broiling for just before serving.
