Directions

  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain and rinse pasta to prevent sticking. Set aside or chill in a large bowl.
  • To create the dressing, combine vinegar, pesto, lemon juice, salt and pepper in a mixing bowl. Slowly whisk in olive oil to incorporate.
  • In a large serving bowl, combine cooled pasta with artichokes, olives, tomatoes, basil, pine nuts and lemon zest. Add in the dressing and gently toss to coat.
  • Serve at room temperature or chilled.
