Gluten-Free Italian Pasta Salad

This Italian pasta salad has it all... all but the gluten, that is. Featuring our Italian Whole-Grain Rice Pasta alongside a bunch of your favorite Mediterranean add-ins—like briny Castelvetrano olives and herbaceous pesto—this picnic pasta recipe is sure to be the talk of the neighborhood.

DIRECTIONS

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain and rinse pasta to prevent sticking. Set aside or chill in a large bowl.
  2. To create the dressing, combine vinegar, pesto, lemon juice, salt and pepper in a mixing bowl. Slowly whisk in olive oil to incorporate.
  3. In a large serving bowl, combine cooled pasta with artichokes, olives, tomatoes, basil, pine nuts and lemon zest. Add in the dressing and gently toss to coat.
  4. Serve at room temperature or chilled.
