Directions

  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions.
  • Meanwhile in another other large pot of boiling water, blanch broccolini until brightly colored and just tender, about 3 minutes. Transfer greens to a bowl of ice water to halt the cooking process. Drain and set aside.
  • In a large saucepan on low heat, cook garlic, anchovy, crushed red pepper, salt and black pepper in olive oil. Sauté together until anchovy melts and garlic becomes golden and fragrant. Discard garlic.
  • Add broccolini to the saucepan. Cook for 8 minutes. Stir in hot pasta. Turn up the heat to medium-high and toss all ingredients until well coated. Cover and cook for another 2 minutes.
  • Serve immediately with freshly grated Pecorino Romano cheese.
