Sun-Dried Tomato Pesto Gnocchi

  1. Bring a large pot of salted water to a boil. Cook gnocchi according to package instructions. Once they float to the top, they are ready. Drain gnocchi, reserving 1 cup of pasta water.
  2. Meanwhile, in a large serving bowl, whisk pesto with olive oil until combined. Toss hot gnocchi pasta in bowl with pesto until generously coated. Add reserved pasta water to mix to loosen sauce, if desired.
  3. Top with grated cheese and serve.
