Easy Italian Pasta Salad

  1. Boil a pot of water and cook the pasta according to the package. Al dente is best.
  2. Drain the water using a colander and allow the pasta to cool. Drizzle with a touch of olive oil to prevent sticking.
  3. Dice all of the veggies, cube the cheese, and cut the salami into wedges while the pasta cooks. Option to grill the artichokes. Be sure to add a sheet of aluminum foil to the grill before adding the artichokes.
  4. Grill your artichokes for 3-4 minutes flipping them halfway through. The oil in the marinade will help prevent the artichokes from sticking. Remove from the grill and allow them to cool.
  5. In a small mixing bowl, combine olive oil, red wine vinegar, oregano, lemon juice, salt and pepper. Whisk until well combined.
  6. Add the cooked pasta, mozzarella cubes, diced cucumbers, sliced tomatoes, thinly sliced shallots, salami wedges, olives, grilled artichokes, chopped Italian parsley and salt and pepper to a large mixing bowl.
  7. Gently toss everything together with the dressing.
  8. Serve slightly chilled and enjoy!
