  1. Drain tomatoes.
  2. Heat oven to 350°F. Arrange cashews on a rimmed baking sheet and roast until golden brown, about 15 to 18 minutes. Let cool.
  3. In a food processor or blender, add both peppers and garlic and pulse until roughly chopped.
  4. Add tomatoes, lime juice, and salt. Process until combined.
  5. Add cashews and pulse until roughly chopped.
  6. Place salsa in a bowl and serve with pita or tortilla chips.
