Loaded Mediterranean Mixed Greens Salad with Golden Balsamic Vinaigrette

This salad is extra, for sure, but that’s why we love it. We load it up with all of your favorite Mediterranean antipasti—from marinated artichoke hearts to Calamata olives—and finish it with a light and tangy golden balsamic dressing.

INGREDIENTS

DIRECTIONS

  1. Prepare the dressing. In a small mixing bowl, combine vinegar, garlic (optional), salt and pepper in a mixing bowl. Whisk in the olive oil in a slow steady stream to incorporate.
  2. In a large serving bowl, add greens, artichokes, olives, pepper drops, Pepperazzi™ and cheese cubes.
  3. Pour dressing over salad and toss well to combine. Serve.
