Pan-Roasted Cauliflower and Olives

There is no such thing as a snooze-worthy side when olives are involved. This roasted cauliflower recipe takes it to the next level with buttery green olives and crisp pine nuts.

DIRECTIONS

  1. Preheat oven to 400F. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, combine the cauliflower, 2 tablespoon oil, salt and pepper. Toss well to coat. Arrange cauliflower in a single layer on the baking sheet. Bake for 15 minutes.
  3. In the same mixing bowl, combine 1 tablespoon oil, olives and raisins. Toss well to coat.
  4. Stir the cauliflower on the baking sheet to prevent burning. Add olive mix to the pan. Bake for another 15 minutes or until cauliflower is tender and lightly golden.
  5. Remove from the oven. Add pine nuts and orange zest to the mix and toss to combine. Transfer to a serving dish. Serve immediately.
