Pan-Roasted Cauliflower and Olives

There is no such thing as a snooze-worthy side when olives are involved. This roasted cauliflower recipe takes it to the next level with buttery green olives and crisp pine nuts.

  • Preheat oven to 400F. Line a rimmed baking sheet with parchment paper.
  • In a large bowl, combine the cauliflower, 2 tablespoon oil, salt and pepper. Toss well to coat. Arrange cauliflower in a single layer on the baking sheet. Bake for 15 minutes.
  • In the same mixing bowl, combine 1 tablespoon oil, olives and raisins. Toss well to coat.
  • Stir the cauliflower on the baking sheet to prevent burning. Add olive mix to the pan. Bake for another 15 minutes or until cauliflower is tender and lightly golden.
  • Remove from the oven. Add pine nuts and orange zest to the mix and toss to combine. Transfer to a serving dish. Serve immediately.
