Spicy Sausage Carbonara

If you’re ready to spice up a classic Italian pasta dish, this recipe is for you. Its big flavors come from fresh garlic, Calabrian chili peppers and hot Italian sausage.

  1. In a large serving bowl, beat eggs and cheese to combine. Add salt and pepper to taste. Set aside.
  2. Heat the oils and the garlic in a large saucepan. Once the garlic begins to turn golden, discard.
  3. Add the chilis and sausage. Brown the sausage until cooked through and it begins to caramelize about 8-10 minutes.
  4. Meanwhile, bring 5 quarts of salted water to a boil. Cook the pasta according to package instruction. Drain, reserving 2 cups of the pasta water to finish the sauce.
  5. Combine hot pasta and sausage mixture in the serving bowl with the egg and cheese. Toss to coat and to gently cook the eggs with the heat of the pasta. Once combined, add about 1/4 cup of the reserved hot pasta water and toss. If the pasta appears too dry, add another splash of pasta water.
  6. Serve immediately sprinkled with additional cheese.
