This classic vegetarian Tabouli is a fresh and flavorful salad perfect for summer entertaining. We love it as a simple summer snack or light lunch served with pita chips, but it is great as a garnish and spread for a number of Mediterranean recipes and mezze platter presentations.

  • Wash the bulgur wheat and soak it in water for 5-7 minutes. To drain well, squeeze the bulgur wheat by-hand. This should remove any excess water. Set aside.
  • Very finely chop the cucumbers, parsley, mint and green onions. Combine them with the bruschetta in a mixing bowl. Add the bulgur and season with salt to taste. Mix gently.
  • In a small bowl, whisk together the lime juice, lemon juice and oil.
  • Add dressing to the bulgur mixture and gently toss to coat.
  • For best results, cover the tabouli and refrigerate for 30 minutes. Transfer to a platter and serve with pita chips.
