A Salute to Pasta Salad

Summer’s here, the parties are coming fast and furious, and the hunt for the perfect pasta salad is on. Sound familiar? Well, you can kick off those shoes and pour yourself a tall, cold glass of iced tea because we’ve already done the work for you. That’s right, we’ve got five pasta salad recipes sure to knock your guests’ socks off this 4th of July and beyond!


Recipe: Mediterranean Penne with Tuna, Olives and Roasted Tomatoes

Let’s kick off this salad soiree with a penne dish that seems to summon the Southern Mediterranean sunshine all by itself. Bursting with black olives, roasted cherry tomatoes, and our organic whole wheat penne rigate, the secret in this salad is that hint of lemon zest that brings out the freshness in all the other ingredients.

Doubling as the great “throw together” weeknight meal, this salad is a snap to make gluten-free by substituting our rice penne for the whole wheat. Just make sure to keep an eye on that pot; too long of a cook on gluten-free pasta can make your noodles a bit too sticky to enjoy.


Recipe: Mediterranean Acini Pasta Salad with Olives and Artichokes

Tiny Acini di Pepe pasta is just as delightful as it sounds. You may know it in soups as pastina, aptly named for its peppercorn shape, but it’s a ton of fun to eat in a salad. Especially one loaded with two kinds of olives and all sorts of fresh herbs. Not to mention a spicy-sweet salad dressing you’ll adore.

You’ll cook your pasta in chicken broth, not in water, but trust us it is worth every flavorful bite. Blend up your dressing and once your pasta is done, go ahead and combine it with all your goodies like your Castelvetranos, Calamatas and artichoke halves. Don’t forget to finish with your Parmesan-Reggiano!

It is served in cold in a fabulous pasta salad brimming with vibrant colors and rustic, rich flavor. If artichokes, spinach and sun-dried tomatoes weren’t enough to get your mouth watering, we dressed this salad with pesto and balsamic.

You’ll have to do a bit of slicing and dicing on your veggies and meat, but once that’s done, it’s pretty much a matter of boiling up some pasta (in super salty water like a good Italian) and mixing it all up for a one of a kind salad on an all-American holiday.
